A lot of it comes down to knowing how to use something against an enemy and she comes up with how to effectively use that in a hunt. For instance, Taiga's got a lot of speed but is clumsy as fuck, so she's trying to teach her how to keep her balance and learning when the best time to dash in to attack would be. At the same time, teaching her that regeneration is *fine* but it has its limits and will only wind up causing issues.
In Rue's case, she's teaching her how to aim properly with her throwing knives, potentially using moving targets-- fairly weak but a little on the quick side. The easiest way to learn is by doing, after all! It's how to get a good feel for her limits, and how she'd be able to effectively throw her knives in an actual battle. During Nightmares she'd hope to figure out how the healing works so she could tell her to not use it unless it's absolutely necessary. Big rule, Rue: healing is fine, but if it's at the cost of your life, it sure as hell isn't worth it. She doesn't dwell on that too much.
The target practice kind of applies to Yuri too, in addition to finding out what he can do with his ice. That ability is a huuuuge pain so she chooses not to spar with him too much, and more than anything hopes that it doesn't wind up getting in anyone's way. Honestly, she partially uses his abilities to try to teach coordination, which luckily, she feels comfortable with two out of three of them coordinating. Just saying, on some stressful days dealing with a certain tiny Tiger, Bonnie absolutely insists on fighting Nightmares and it's not a pretty sight.
So yeah, essentially, it's trying to balance what they're useful for and trying to get them how to coordinate well as a team. On the offside, she does balance all that by being surprisingly nice if they need to actually y'know, rest or take a break. There'll be times where yes, she's overbearing and telling them that they won't get rest if there's a Witch, but she'll make sure they're well fed and happy! She can supply what she needs to, because she takes care of her pupils.
